Our History.
For decades, we have been preparing our recipes in the traditional way, and with the best selection of natural ingredients. We always take care of the appearance and texture of our baked products so that they are irresistible to the eye, touch, and palate. Moreover, just by hearing the word Polo, we all know that we are dealing with high-quality and trustworthy products.
Both our know-how and our respect for the most traditional recipes have ensured that, every day, more and more people around the world can taste Polo’s specialities… and that they always come back for seconds!
Panettone: Preparation
The quality of our Panettone is based on the slow process and the choice of quality materials. Every step of our process is treated with delicacy, and this is reflected in the delicious taste of the products.
Sourdough, flour, and water:
A slow process that, as tradition dictates, requires time and quality raw ingredients.
Sourdough process:
Three mixing and fermentation sessions. The secret lies in the patience and knowledge of the master craftsman.
Night kneading:
A long fermentation process is necessary for obtaining a perfectly textured dough.
Morning kneading:
The basic ingredients are added progressively. Quality raw ingredients such as water, egg yolk, sugar, and butter.
Dividing and shaping:
The dough is divided into homogeneous portions with just the right weight for each Panettone.
Weighing
Fermentation:
Controlling the times and temperatures is key during the resting process for the Panettones to ferment.
Final fermentation:
A slow process for the final fermentation of our product.
Baking:
At about 180 °C.

A renewed classic.
A shower of chocolate chips that is slowly savoured with each bite. We add just the right proportion of chocolate so that we never lose the essence of the most authentic Panettone.
Focaccia
Because we don’t always feel like having something sweet, we have created a delicious artisan focaccia made with natural ingredients, such as flour, olive oil, salt, and water, which are left to ferment for hours, resulting in a delicious dough that is baked slowly.
Its similarity to artisan bread, although with a softer and spongier texture, makes it the perfect snack to eat at any time, either alone or with other foods.
Pandoro
For the preparation of this delicious sweet, we follow the traditional recipe that is more than 120 years old. This product is characterised by its star shape and the powdered sugar that is added just before it is consumed.
The magic of the powdered sugar and the characteristic flavour of Pandoro are perfect for enjoying an unforgettable moment in good company.
